The magic of wine
Vinification is, by definition, all the operations necessary to transform grapes to wine. These include the well-meaning work of the cellar workers: pumping over, tastings, temperature follow-up and de-vatting etc. (see photo)But, above all, there is a share of MAGIC. The intensity and strength of fermentation can seem supernatural and irrational to us.The creation of red fruit and spice aromas and flavours is fascinating and captivating to us. The future of each cuvée is the stuff of dreams. And yet, this is a ritual that has been repeated since the origins of civilisation. But wine has something surprising in the pleasure and satisfaction it gives us. You don't need to be a honed taster to enjoy the emotions given off by the wines from the Cave de Fleurie. However, with experience, you become more sensitive to the nuances of each vintage, terroir and cuvée.
